1 Lemon cake mix
1 C water
1/4 C oil
1/4 C Sour Cream
2 eggs
Beat all ingredients together about 3 minutes with whisk or egg beater. Grease dark pan ( I use 2 bread pans sometimes or a dark Bundt Pan or my round roaster). Pour batter in prepared pan and place in Sun Oven that has preheated to at least 300 degrees (ideally 350 or above). Bake till done in center (takes about 45 min at 325-350). Prepare glaze.
Glaze:
3 lemons, juiced (about 3/4 cup)
zest from rinds
2 C powdered sugar or more
depending on how thick you like your glaze. poke holes in top of cake all over with fork. pour glaze over. Let sit a minute to soak in, Serve!!!!
