We had a great November day today in Louisville - a perfect time to pull out the Solar cooker and put it to work. Lunch today? Chicken Sandwiches!
I let the Chicken soak in some lemon-honey marinade this morning. This is from allrecipes.com

1/4 cup canola oil
1 lemon, zested and juiced
1 tablespoon Dijon mustard
1 tablespoon honey
2 cloves garlic, pressed
2 teaspoons Worcestershire sauce
2 teaspoons dried Italian herb seasoning
1 1/2 teaspoons salt
1 teaspoon ground black pepper
(also 4 skinless, boneless chicken breast halves...I had a little more but it seemed fine.)
Because I'm a fan of overkill, I also tenderized the chicken a little on top of marinating it. I like a juicy chicken sandwich!
On a great day like today, the chicken cooked up in no time. It was a little cold to eat outside, but we were able to take things inside and enjoy chicken sandwiches with a little tomato and avocado. AWESOME!
This one goes in my "make again" pile. On a sunny day with guests, this is perfect for the solar cooker!
