Recipe 40 in the Solar Hot Pot
Sun Seasoned Potatoes
Wow—I’m up to recipe # 40! Only 10 more to go to reach my goal!
So we did these in one Solar Hot Pot while the meatloaf cooked in our other Pot. (See Megasun Meatloaf post for recipe.)
Prep:
8 small, red potatoes (wash and dice small)
3 T olive oil (toss with potatoes)
scant 1/2 t. dried sage (sprinkle over potatoes)
1/2 t. dried thyme (sprinkle over potatoes)
1/4 t. dried rosemary (sprinkle over potatoes)
1 t. dried parsley
1 t. dried chives
salt to taste
10:00 am—Put all in Solar Hot Pot, cover, set up facing sun, set timer for 1 hour.
11:00 am—shake and wiggle the Hot Pot (use pot holders!) to “stir” without opening lid. Adjust to sun. Set timer for 1 hour.
12:00 pm—check for done-ness (eat one from center of Pot). If not done, check every 20-30 minutes.
Ours were still underdone at 1:00 pm, but we ended up having a lot of clouds. Next time if cloudy, we’ll dice them smaller and/or do fewer potatoes. Either idea would probably help. Going to reheat/further cook the leftover potato cubes in the Hot Pot another day. (smile)
