Solarcooker Leftover Turkey Fajitas

Grilling the ingredients on my Solar Burner

Almost finished with the turkey fajita mixture


Solarcooker Leftover Turkey Fajitas (or chicken)

(Great way to use leftover Thanksgiving or Christmas Turkey)

 

Ingredients:

 

  • 2 large onions
  • 1 large bell pepper
  • (May also add jalapeno or other favorite peppers as well)
  • 4 cloves of garlic
  • 4 tbsp. of cooking oil (olive or your favorite)
  • 1 tsp ground or flake oregano
  • 1 tsp ground or flake basil
  • 1 tsp ground cumin
  • ½ tsp black ground pepper
  • 2 tsp salt (to taste)
  • 4 cups Leftover turkey, shredded by hand
  • Package of flour tortillas, or your favorite corn tortillas if you prefer

 

Directions:

If you have a solar oven you can preheat and place the flour tortillas in to warm inside of a covered pan with a moist towel to prevent drying of tortillas while you prepare the meat.

 

  • Slice onions, peppers, garlic and all other seasonings along with oil and mix well into to heavy gauge, covered frying pan.
  • Place frying pan onto parabolic cooker and cook the raw veggies until caramelized or cooked to desired tenderness.
  • Add the hand shredded turkey to the cooked veggies and stir and mix well to coat the meat with the previously cooked oil and vegetables.
  • Allow another five minutes of cooking to heat up all ingredients.


You can now allow the pan of fajita mix to simmer on the parabolic by reducing the size and intensity of your focal point on the bottom of your pan, or stick it into your solar oven to continue cooking a while longer or to keep warm.

 

Serve on warm tortillas with your favorite fresh salsa, sour cream and guacamole...
