Solar Pumpkin Muffins
3 1/2 cups of whole wheat flour
2 teaspoons of salt
2 Tablespoons baking powder
½ cup of dairy free chocolate chips
1 cup of chopped pecans
30 ounce can of pumpkin pie mix
½ cup of molasses
¾ cup of water
Place dry ingredients into a large bowl and mix, then add all the moist ingredients and mix together.
Bake in Solar oven for one hour in a oiled muffin tin. Makes a dozen large muffins.
Great breakfast treat.
Side Note: Pumpkin pie mix varies greatly in consistency. Some times it is like thick custard and other times it is like thick soup. If yours is like thick soup you will need to cut back on the amount of water in the recipe.

This sounds like a great recipe for a solar oven treat that is easy to make and cook.
It looks similar to a pumpkin muffin recipe we have had success with in our solar cookers as well.
