Pan of hot oil for deep frying
* Pre heat pan of oil on parabolic cooker
Ingredients:
3 1/2 C flour
4 tsp. baking powder
1 tsp salt
2 tsp. Pumpkin pie spice
1 C sugar
2 Tbsp. butter, softened
2 eggs, beaten
2 tsp vanilla extract
1/2 C buttermilk
1 C pumpkin puree
Canola oil for frying
And a little extra flour for working with dough (it is quite sticky)
Whisk together 1st 5 ingredients (dry ingredients), Then combine rest of ingredients (wet ingredients). Pour wet ingredients into dry ingredients. stir till well combined. Turn out on well floured surface and roll dough 1/4 " thick.
-Cut out.
-Fry 2-3 min. on each side and then dunk immediately in buttermilk glaze.
Buttermilk Glaze
3 C powdered sugar
1/2 C buttermilk 1/2 tsp. vanilla extract
1/2 tsp pumpkin pie spice
