The air is getting crisp and obviously I am ready for the holidays! These fragrant almonds had even the lawn guys in the neighborhood coming over to ask about my Sun Oven and how it works. After my best explanation they were both excited to look into getting one for their families. These almonds were so easy and couldn't be more tasty. Here is the recipe I found on a blog titled: crockpot365 that specializes in crock pot cooking. I figured if it can work in the crock pot it can easily work in my Sun Oven! Here it is:
1 1/2 cups sugar
3 tablespoons cinnamon
1/8 teaspoon kosher salt
1 egg white
1 1/2 teaspoons vanilla extract
3 1/4 cups whole raw almonds
aluminum foil or parchment paper
Cooking spray
Set out the Sun Oven to preheat.
Spray the cookie sheet well with cooking spray. In a mixing bowl, combine sugar, cinnamon, and salt. Set this bowl aside.
In a larger mixing bowl, whisk together the egg white and vanilla extract. Pour the almonds into this bowl and stir well to coat. Add your cinnamon mixture to the top of the nuts and toss with spoons to fully coat.
Put the almonds into your Sun Oven and let the great smells begin! I cooked mine for about 2 hrs on 350 degree. I had to keep stirring every 20-30 minutes to keep them from sticking together and the bottoms burning.
When the nuts are all hot and toasty, let them cool fully on a length of foil or parchment paper. When fully cool, (and if you have any left) store in an air-tight container. Enjoy!!
