Nothing motivates me more when it comes to cooking then feeling the satisfaction of cooking food I know my family loves! Pumpkin bread is my little boys favorite so these cupcakes, even cooked by the sun, were still a big hit! I found this recipe from cooks.com
4 C. flour
3 C. sugar
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp baking powder
1 tsp vanilla
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/4 tsp ginger
1 (16 oz) can pumpkin
1 C. vegetable oil
4 eggs
2/3 C. water
Preheat Sun Oven to 350. In medium bowl, whisk dry ingredients together well. In a separate bowl, stir together pumpkin, oil, eggs and water, then combine with dry mixture stirring just enough to moisten. Do not over mix.
Fill each cupcake liner 2/3 full. Bake for 15 min. or until a toothpick comes out clean. Remove from Sun Oven and let cool on a wire rack for a few minutes. Makes 3 dozen.
