Solar Cooked Chocolate Zucchini Bread

I figured if Zucchini bread is good, why not make it great by adding chocolate! Everything is better if it has a little addition of chocolate right? :)
The best part of making this sweet bread was grating the zucchini into finely sliced pieces and blending it in. When it came to the cooking, my Sun Oven's performance far exceeded what this bread's texture would have been if I had cooked in my house oven. I cooked it in a bread pan but then placed the bread pan inside another pan that had a lid. Keeping the lid on it as it cooked allowed the outside of the bread to be cooked with a bit of crisp and allowed the inside to be fluffy and moist! My family really enjoyed this treat and I am especially proud of the fact that I even tricked my picky 5 year old into eating a real vegetable!!

I like many vegetables, but I will have to admit that squash is not one of them, but if you can get someone to eat it by "disguising" it as something appetizing, then that is an accomplishment.
