Well good grief, you’d think it was winter! We’ve had lots of clouds many days and even snow one day last week! But finally the sun won over, and we did some solar cooking.
Today we made some flat bread, only this time I added basil and chopped tomatoes. Wow--I think it’s the best flatbread I’ve ever made (and I’ve made “a lot” of flatbread over the years)! I think the tomatoes helped the bread not dry out. They tasted a little like some fancy flavored crackers with the herby-ness of the basil and sweetness of the tomato, only they were soft. YUM. And I loved how the Solar Hot Pot gently baked them.
I almost procrastinated too long--didn’t get them out until 2:45! But around 5:00, they were very nicely done.
We also cooked some sliced mushrooms in the Solar Hot Pot--melted the butter, added mushrooms, checked them every so often. Easy peasy!
