Recently Cooked Doughnuts from the Solar Oven
I found a doughnut pan at my daughter's house a month ago that I didn't even know she had and knew that she doesn't use much since she works full time and always seems to have plenty to do. So I adopted it for the time being and am having so much fun with it, she might have to remind me to give it back!
After experimenting with a few recipes, this chocolate one seems to be everyone's favorite!

Dark Chocolate Donuts (makes about 8-9)
3/4 C all purpose flour
1/4 C dutch processed cocoa powder
Scant 1/2 C sugar
2 tsp baking powder
1/4 tsp salt
1 lg egg
1/2 C milk
1 tsp vanilla
4 Tbsp canola or coconut oil
Combine dry ingredients in small bowl.
Combine wet ingredients in another bowl and pour into dry ingredients. Mix together till just
Incorporated and spoon into sprayed or greased doughnut pan. I filled each one about 3/4 full
To make 9 donuts. Bake in your preheated Sun Oven at 350 for 22-15 min. Turn out on cooling Rack with a baking sheet or paper towel under it. Glaze the donuts while warm and let set.
Glaze
3/4 C powdered sugar
2 Tbsp Dutch process cocoa powder
Pinch salt
2-3 Tbsp milk
1/2 tsp vanilla extract
Mix till smooth and dip tops of donuts. Can add sprinkles, coconut, nuts, etc.
